Food/ A Proper Diet/ Do Food Cause Triggers Or If Are You Restricted To A Proper Diet?

I am a Ex Cook and a Epileptic. I cook out of my home and I have a cooking page. And I am starting to make recipes for Epileptics and other disorders, diseases. So I am gathering material, as much research, so I can come up with recipes. I want to help everyone who is struggling or is unable to learn to cook. I wanna give back. I am trying to do right with my life after I have been struggling with Developmental disabilities and Epilepsy for 42 years.

Heya Mindy. Don't worry about baking- there's a lot you can do- just have to modify it by using avocado or zucchini and succralose/ other sweeteners. you get used to it. Bacon is actually quite high in protein- almost equal protrin: fat, so not the best for a high fat low protrin 20g carbs diet unless you weigh everything out really carefully. the aged cheeses (18 month old cheddar, pecorino, parmesan) and feta are really great sources of fat, as they have less than 0.1g carbs per 100g.
I find I haven't been eating much meat at all because it pushes pushes me over my protein macro limit and that throws the rest of the day's numbers out. I've been finding myself turning to a nice green salad toppled with feta or 18 m/o cheddar, grated pecorino, avocado and a drizzle of lemon juice. Really delicious!

@A MyEpilepsyTeam Member You're allowed up to 20g carbs on the epilepsy / very low carb diet, and then split the rest of your food into approx 85-90% fat, 10-15% Protein. It is extremely icky to go from eating what is considered "healthy" to eating 90% butter, cream, etc, but I'm getting around it by using spiralized zucchini noodles with bacon, butted, cream and cream cheese sauce for dinner; avocado, pecorino, rocket and feta salad for lunch and omelettes or scrambled eggs with feta and aged cheddar for breakfast. coffee with cream instead of milk is a nice way to 'hide' it as well. There are also several recipes for "fat bombs" available online- mostly for coconut oil sweets/ treats that are high in fat to ease you into the diet.
To answer your question- I'm 32. I developed refractory epilepsy in 2010 after getting encephalitis from what was thought to be a tick- borne disease, Bartonellosis. I'm a vet. I had just qualified and started a surgical residency, which I had to discontinue because of the seizures.
The MAD might be the perfect start- you can be treated as an outpatient, it's less restrictive (I think you're allowed up to ~50g carbs a day depending on how much you weigh).
Take full advantage of living near Hopkins!!! I'm all the way across the pond in South Africa and doing this through trial and error :)
Hope your appointment goes well and that you get a nutrition plan! Would be wonderful to hear that this helped you!
